No Bake Banana Chocolate Chip Cookies

These raw, no bake, banana chocolate chip cookies take only 10 minutes of prep and come together in about 1 hour after chilling in your fridge. They are a perfect recipe to make with the kids and a great replacement for a midday snack or after dinner dessert!

Ingredients

  • 10 tablespoons banana puree (1-2 bananas)

  • 1/2 cup creamy almond butter (or nut butter of choice)

  • 2 cups organic gluten free sprouted quick oats or rolled oats

  • 2/3 cup semi sweet chocolate chips

  • A pinch of sea salt

  • 1/2 tsp organic ground ceylon cinnamon (optional)


Preparation

Step 1

Take the ripe bananas and place them in a mixing bowl. Mash them thoroughly using a fork or a potato masher until they are smooth and no lumps remain.and


Step 2

Measure out 10 tablespoons of the banana puree and mix with your nut butter of choice and mix until well combined.


Step 3

Stir in the oats, chocolate chips, sea salt and cinnamon (if using) and mix until ingredients are fully combined.


Step 4

Line a baking sheet or a tray with parchment paper. Use a spoon or a cookie scoop to scoop out small ball of "dough." Shape into cookies by flattening with your hands until desired shape is achieved. *It helps to spray your hands with a little avocado oil to prevent sticking. You can also flatten them on the parchment paper using the back of the spoon.


Step 5

Place the tray in the refrigerator for at least 1 hour, or until the cookies have firmed up and are set.


Step 6

Once the cookies are firm, you can enjoy them immediately. Store any leftovers in an airtight container in the refrigerator for up to one week.
